chocolate and almond biscotti

These biscotti are only slightly sweet and have a lovely dark chocolate flavour.

To make them you will need 1¾ cups of plain flour, 1½ teaspoons baking powder, ½ a cup of cocoa powder, 250 grams marzipan, 150 grams cold salted butter, 3 eggs, 1½ cups blanched and toasted whole almonds and 1 tablespoon of almond-flavoured liqueur (or similar).

Preheat the oven to 180C (350F). Mix the flour, baking powder and cocoa powder in a food processor until well combined. Cut the marzipan and butter into cubes and place in the food processor with the flour mix then process until the mixture is crumbly. In a bowl lightly whisk 3 eggs with the liqueur then add the almonds and the processed mixture and combine well. On a lightly floured surface gently roll the mixture into 2 flattened logs and transfer these onto baking paper on an oven tray, baking them for 30 minutes. Cool on a wire rack for 15 minutes then carefully cut into diagonal slices (2 cm wide), placing them back on the baking paper cut side down. Bake for 8 minutes on each side.
