ginger chicken + vegetable stir-fry

Serve these two simple stir-fries with rice for a quick and delicious meal.

This stir-fry was taught to me by a good friend and has only 4 ingredients:  fresh ginger, sesame oil, chicken and oyster sauce.

Cook shredded ginger briefly in a hot dry wok until fragrant. Next the sesame oil and then the diced chicken. When the chicken is cooked, a little oyster sauce adds the final seasoning.

To make this vegetable stir-fry, halve some young bok choy and quarter some mushrooms.

In a wok, heat vegetable oil, with the addition of a little chilli oil to taste, and flavour by briefly frying a broken or sliced clove of garlic. Discard the garlic and fry the bok choy for a few minutes before adding the mushrooms. Add a little chicken stock or water if necessary and when the vegetables are nearly cooked, drizzle with a little soy sauce and season with white pepper. Finally, add 2 teaspoons of sesame oil before serving.
