tres leches cake

Having eaten this cake in a restaurant my sister wanted to recreate it. Made with three kinds of milk as well as cream, it’s deliciously milky and has the consistency of a good trifle. Desserts made with milk are popular in all Hispanic countries and there are many versions of this cake. We used a recipe from Pati’s Mexican Table for this one.

Preheat your oven to 180ºC (350ºF) and butter a 23cm x 33cm (9″×13″) tin, lining the bottom with parchment paper. Place 9 egg whites into the bowl of a mixer and beat on medium-high speed for 4 to 5 minutes until they hold soft peaks. Slowly stir in 1 cup of sugar and continue beating until you have stiff peaks. Remove the egg whites into a large mixing bowl. Clean the mixer bowl and whisk before adding 9 egg yolks. Beat on medium-high speed for about 5 minutes until the yolks become pale and creamy. Stir in 1 tablespoon of pure vanilla extract and continue beating for 1 minute. Pour the egg yolks onto the egg whites and carefully fold until combined into a homogeneous single batter. Fold in 2 cups of flour until well mixed then pour the batter into the prepared cake tin. Bake for 22 – 25 minutes, or until a toothpick comes out clean and the top of the cake is golden brown. Allow it to cool then turn onto a tray, remove the parchment paper then turn again onto a serving platter. Using a fork poke holes all over the cake so that it will better absorb the vanilla sauce. To make the sauce combine 1 can of sweetened condensed milk, 1 can of evaporated milk, 1 cup of milk and 1 tablespoon of vanilla extract. Pour the sauce over the cake – there will be a lot – and allow it to absorb. In the bowl of your mixer whip 2 cups of cream with ¼ of a cup of confectioners’ sugar on medium-high speed until you have stiff peaks. Spread the whipped cream all over the already-wet cake and chill in the fridge until ready to enjoy.

  1. How do you make a chocolate tres leche cake. Imade your tres leche cake for my family and we loved it , so did my friends.

    • I haven’t tried a chocolate version but there are a few online. Try adding half a cup of cocoa powder to the cake mix and 140g (5 oz) unsweetened chocolate to the sauce mix. You could also add make a chocolate ganache for the top. Let me know if you try it!

  2. Yum! I loved this cake when I ate it in Mexico. I’ve never seen it with icing before! It is a traditional Mexican recipe, or an american interpretation?

    • I had never eaten this cake before so I’m not sure how traditional it is, but Pati is Mexican and apparently has a TV show. The ‘icing’ is just sweetened cream!
