This is my own version of a classic.

For serving, wash a head of iceberg lettuce and separate the leaves. For 700g (1½ lbs) minced chicken you will need 1-2 carrots, an equal amount of cabbage, 1 green pepper, 1 small can of water chestnuts , 5-10 diced button mushrooms and 1-2 onions. All of these vegetable need to be finely diced. You will also need 2-3 finely diced cloves of garlic and an equal amount of finely diced fresh ginger.  Heat your wok and add some vegetable oil. Fry the garlic for 30 seconds and then add the chicken. Break into small pieces and cook until all the liquid has evaporated. When the chicken starts to fry add the carrots, cabbage, green pepper and ginger. Stir-fry for 2 minutes and then add the mushrooms and water chestnuts and continue to fry for another 2 minutes. Lastly add the onion and fry for 1 minute. Turn off the heat and add 2 tablespoons of Hoisin Sauce, 2 teaspoons sesame oil, 2 teaspoons of chilli paste (optional), 1 teaspoon of ground white pepper and ½ a teaspoon of five spice powder. Serve in lettuce cups.
