grilled turkey meatballs

In Vietnam these grilled meatballs are made of minced pork but less traditional turkey ones are delicious too.

In a food processor combine 225g (½ lb) of turkey mince with 4 finely diced shallots, 8 minced garlic cloves, 2 tablespoons of Vietnamese fish sauce, 2 teaspoons of sugar and plenty of freshly ground black pepper. Process to a sticky paste then combine with another 225g (½ lb) of turkey mince and 2 tablespoons of roasted rice powder and mix well. nuoc-chamIf you don’t have this to hand you can substitute some rice flour toasted in a dry pan. Oil your hands and form the meatballs before threading them onto skewers. For an authentic taste cook them over coals or on a hot barbeque. If you have neither available then hot grill will work too. In Vietnam these skewers are served on a bed of rice vermicelli and garnished with spring onions and little cubes of rendered pork fat. Nuoc cham dipping sauce is a must. Combine ¼ of a cup of Vietnamese fish sauce, 2 minced cloves of garlic, 1 finely diced small red chilli, 2 tablespoons of sugar and 2 tablespoons of lemon juice.

Here’s the salad I served with my meatballs.

For this salad finely slice snow peas, carrots, celery and red onion. For the dressing combine Vietnamese fish sauce, freshly ground black pepper, lemon juice and a little sugar to taste. Add plenty of Vietnamese mint and garnish with crushed peanuts.
